Unseen Work is an immersive dining installation that reimagines the table as both stage and canvas, where food, process, and storytelling converge. Conceived by artist Jaime Reyes and executed in collaboration with Chef Sam Diaz and Richard Vergez, the work reflects on the unseen labor of the kitchen, the gestures, choices, and moments of care that shape a meal long before it reaches the plate.
Emerging from a conversation with Chef Diaz, the project moves away from the spectacle of plating and presentation, instead shedding light on what often remains invisible: the revisions, the unspoken rituals, the intuitive decisions that quietly define each dish.
At the center of the installation is an illuminated dining table composed of five seamlessly joined 75-inch screens. Around it, guests gather to share a multi-course meal. As they eat, a slow text-based narrative unfolds across the glowing surface, revealing the hidden stories of process and authorship that underpin the food before them.
This is not a performance, but a meditation, a shift from outcome to process, from spectacle to intimacy. The act of eating becomes an entry point into reflection on labor, care, and creation.
Each evening offers a singular experience: a shared dinner with sound design by Richard Vergez, and a limited-edition print by Jaime Reyes for every guest. Together, these elements extend the work beyond the table, making Unseen Work both a meal and a memory, an invitation to witness what usually remains behind kitchen doors.

Jaime Reyes is a Venezuelan artist based in Stockholm, specializing in new media art and installations. His work is characterized by a surreal, multicultural, and nonlinear aesthetic achieved through the innovative use of diverse technologies. Reyes crafts interactive installations and subtle interventions in underutilized spaces, using light as his medium to transform how we perceive our environment.
More recently, Reyes has embraced digital minimalism by creating animations that mirror the daily rhythms of his life. These algorithm-driven works unfold on monumental scales, challenging the conventional coolness of technology with an unexpected emotional depth. Through this endless exploration of generative art, Reyes continually redefines what it means to merge creativity with technology.
His work has been exhibited internationally, including in Paris, Madrid, the United Kingdom, Copenhagen, New York City, and Dania Beach, establishing him as a distinct voice in the global new media art scene.
Growing up as the youngest of 4, around a family who ended a meal by asking "what's our next meal going to be," it was pretty clear to Chef Sam Diaz that food brought people together and good food keeps them at the table.
Raised in Miami, Sam was exposed to various food cultures, but their love of Italian food was fully realized in working alongside Chef Mike Pirolo, first at Scarpetta and then joining him as he opened Macchialina in the heart of South Beach. From there, they absorbed all things Italian and rose to be the chef in Brooklyn, NY at The St. Austere, Macchialina’s sister restaurant.
After 6 years in Brooklyn, family and a change of pace led them to Northwest Arkansas, where, after a couple of years, they were given the opportunity to open their own small restaurant, Berretto. Chef Sam believes in food being fresh, fun, and more importantly, so good you'll take your time to savor each bite.
Richard Vergez is a multidisciplinary Cuban-American artist whose practice spans visual art, sound, and installation. His work, rooted in both abstraction and the avant-garde, explores the interplay between physical media and auditory experiences. With a background in graphic design and audio-visual composition, Vergez has exhibited work in New York, London, Miami, and beyond. He is also active in South Florida's experimental music scene, founding the independent music label Noir Age and composing scores for contemporary dance performances. Vergez’s interdisciplinary approach reflects his ongoing interest in the dialogue between sound and vision, exploring new possibilities in mixed-media creation.
